Fully Loaded Salad
1 lb. baby kale chopped
1 cucumber cubed
6 hard boiled egg
½ lb. baby beets
½ cup pumpkin seeds
cracked pepper to taste
1 lemon juiced
6 tbs. olive oil
4 tbs. balsamic vinegar
1 lb. chicken/tuna (optional)
Combine all ingredients in a large bowl and toss vigorously.
